Supreme Bliss Balls

When it comes to healthy sweet treats, this one is a winner.  It is great for lunch boxes, picnics and after dinner treats.  They only take a minute to whip up and keep well in the fridge for a week or so.  They are also great to freeze.

truffles3Ingredients

1 cup raw almonds
20 large dates (pitted Medjool)
3 tbsp fair trade cocoa powder
1 orange zest and juice
1 pinch sea salt
1/2 tsp cinnamon
Extra cocoa for rolling




Method

  1. Soak dates in hot water for 15 minutes before you begin.
  2. Grind almonds in a food processor until fine.  Add strained dates, cocoa powder, orange zest, orange juice, cinnamon and salt.
  3. Process until mixture forms a ball.  If the mixture is too wet, you can add some coconut or more ground almonds.  If it is too dry, add some of the date juice.
  4. Form 30 small balls out of mixture.  
  5. Roll or dust in some extra cocoa as per your taste and refrigerate for at least an hour before serving.
     

Chef's hint

These tasty morsels can also be rolled in coconut, mixed nuts or, for the ultimate in decadence, roll them in melted, dairy-free dark chocolate and let them sit in the fridge!
